Simple AF *No* Chicken Noodle Soup
I had a little cold a few weeks back (no, it wasn’t COVID!), and this soup BROUGHT ME BACK to life!! Not to mention, it was as simple as can be, which I needed, given my state of just needing rest at the time. Whether you’re nursing a cold or just looking to warm up this winter, this simple AF *NO* Chicken Noodle Soup is for you! And you truly won’t believe how easy it is. Let’s dive into what you’ll need…
Simple AF *NO* Chicken Noodle Soup Deets!
As I mentioned, this recipe doesn’t call for any chicken, but you’re more than welcome to add some in for extra protein! I don’t love chicken for ME, but that’s not to say I’m done with it forever – I could wake up tomorrow craving it, who knows, right?! Anyways, here’s what you need for the soup:
- Low Sodium Veggie Broth: The base of the soup that I used was a low sodium veggie broth (we get so much salt as it is!) You can easily swap this out with a nutrient dense bone broth or chicken broth if you prefer as well. I usually just go for the organic store brand at Whole Foods.
- Veggies Galore: This recipe is packed with veggies, including white onion, celery and carrots. It’s such a solid combo, you truly don’t need much else. I recommend dicing these very fine to get nice bite-sized pieces.
- Protein Pasta: I chose to use the Banza Chickpea Pasta Shells for my soup, but you can use any that you prefer. If you are going to follow the recipe and not add in chicken, I suggest keeping the protein noodle in here so that it’s a full meal with a protein source for you as well! If you’re doing the chicken, you can use any noodle you prefer!
- Organic Poultry Seasoning: I mentioned this was simple, and this seasoning is WHY! I linked my fave one, but any will do. It’s essentially a blend of all the best poultry seasonings – sage, thyme, onion – the works! And you only need to use this one vs. multiple. I’m SOLD!

Ingredients
- 48 oz. organic low sodium vegetable broth + water if needed
- 1 box chickpea pasta shells
- 3 stalks celery, finely diced
- 1 white onion, finely diced
- 3 carrot stalks, washed and finely diced (peel if not organic)
- 3 cloves garlic, minced
- 3 tbsp grass fed ghee
- 3 tbsp poultry seasoning
- Salt & pepper, to taste
- 1-2 tbsp extra virgin olive oil, to finish

Instructions
Simple AF Soup Time!
- In a large pot, add the ghee on medium heat, followed by the garlic and onion.
- Once it begins to turn translucent, add in carrots and celery. Allow to saute until the vegetables begin to soften (about 10 minutes), keeping an eye that the garlic doesn’t burn.
- Following, add in your broth, poultry seasoning, salt and pepper, then cover the pot for about 15 minutes as it simmers.
- Turn heat up to high, and once it’s boiling, add in the pasta shells. Allow to cook for about 5 minutes, uncovered.
- Turn heat down to medium/low, and cover again. Allow the soup to simmer for another 10 minutes, then enjoy!
